Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until onion is translucent.

Add diced pumpkin to the pot and cook for 5 minutes, stirring occasionally.

Pour in vegetable stock and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until pumpkin is tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in coconut milk, salt, black pepper, and paprika. Cook for an additional 5 minutes.

Serve hot, garnished with fresh parsley.
