Preheat the oven to 425°F (220°C).

Wash and peel the carrots and sweet potatoes. Cut them into bite-sized pieces.

Trim the Brussels sprouts and cut them in half.

Peel and slice the red onion.

In a small bowl, whisk together the maple syrup, orange juice, olive oil, salt, and black pepper.

Place the vegetables on a large baking sheet and pour the maple orange glaze over them. Toss to coat evenly.

Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and golden brown, stirring once halfway through.
