Mad’s Peach-Curry Soup
Peaches are a good source of vitamins A and C, as well as fiber.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Peel and pit the peaches, then chop them into small pieces.

In a large pot, sauté the onion and garlic until translucent.

Add the curry powder and cook for another minute.

Add the chopped peaches, coconut milk, vegetable broth, lime juice, salt, and black pepper to the pot.

Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

Remove the pot from the heat and let it cool slightly.

Use an immersion blender or a regular blender to puree the soup until smooth.

Return the soup to the pot and heat it over low heat for a few minutes.

Serve the soup hot, garnished with fresh cilantro.
