In a mixing bowl, combine natural peanut butter, honey, oats, and vanilla extract. Mix well until all ingredients are evenly combined.

Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.

Place the truffles in the refrigerator for 30 minutes to set.

In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.

Dip each chilled truffle into the melted chocolate, coating it completely. Place the coated truffles back on the parchment paper.
