  2. Add black-eyed peas, vegetable broth, tomato paste, paprika, cumin, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in spinach and cook for an additional 5 minutes, until wilted.
  4. Remove from heat and let the soup rest for 5 minutes.
  5. Stir in lemon juice and garnish with fresh parsley.
  6. Serve hot and enjoy!
