  • 400 gram Eggplant
  • 300 gram Zucchini
  • 200 gram Red Bell Pepper
  • 200 gram Yellow Bell Pepper
  • 150 gram Onion
  • 2 clove Garlic
  • 400 gram Tomatoes
  • 2 tablespoon Olive Oil
  • 10 gram Fresh Basil
  • 5 gram Fresh Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplant, zucchini, red bell pepper, and yellow bell pepper into thin rounds.
  3. Dice the onion and mince the garlic.
  4. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until fragrant.
  5. Add the sliced vegetables and tomatoes to the skillet. Season with salt, black pepper, fresh basil, and fresh thyme.
  6. Cook for about 10 minutes, until the vegetables are slightly softened.
  7. Transfer the mixture to a baking dish and bake in the preheated oven for 30 minutes.
  8. Remove from the oven and let it rest for 10 minutes before serving.
  9. Serve hot and enjoy!
