  1. Heat 1 teaspoon of vegetable oil in a wok or large fry pan over high heat.
  2. Add the mushrooms and stir-fry for 3-4 minutes until they start to release their juices.
  3. Push the mushrooms to one side of the pan and add another teaspoon of vegetable oil to the empty side.
  4. Add the garlic and ginger to the oil and stir-fry for 30 seconds.
  5. Stir in the mushrooms and mix well with the garlic and ginger.
  6. Add the soy sauce and salt, and continue to stir-fry for another 2-3 minutes until the mushrooms are fully cooked.
  7. Garnish with chopped spring onions and serve hot.
