  2. Peel and dice the sweet potatoes and set aside.
  3. Heat olive oil in a large pot over medium heat.
  4. Add the diced onion and minced garlic cloves to the pot and sauté until translucent.
  5. Add the ground cumin, ground coriander, paprika, salt, and black pepper to the pot and stir well.
  6. Add the rinsed lentils, diced sweet potatoes, and vegetable stock to the pot.
  7. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, or until the lentils and sweet potatoes are tender.
  8. Stir in the fresh cilantro and lemon juice.
  9. Remove from heat and let rest for 5 minutes.
