Ingredients
  • 1 cup Lentils
  • 1 small Red onion
  • 1 medium Bell pepper
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 cup Kalamata olives
  • 0.5 cup Feta cheese
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Dijon mustard
  • 2 tablespoon Red wine vinegar
  • 4 tablespoon Extra-virgin olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse the lentils under cold water.
  2. In a saucepan, bring 2 cups of water to a boil and add the lentils. Cook for 20-25 minutes until tender.
  3. Meanwhile, chop the red onion, bell pepper, cherry tomatoes, cucumber, and olives.
  4. In a small bowl, whisk together the Dijon mustard, red wine vinegar, olive oil, salt, and black pepper.
  5. Drain the cooked lentils and transfer them to a large mixing bowl. Add the chopped vegetables, crumbled feta cheese, and fresh parsley.
  6. Pour the vinaigrette over the lentil mixture and toss to combine.
  7. Let the lentils vinaigrette rest for 10 minutes to allow the flavors to meld.
  8. Serve the lentils vinaigrette as a main course or as a side dish.
