  4. Add the lentils, pumpkin or sweet potatoes, vegetable broth, tomato paste, cumin powder, paprika, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes, or until the lentils and vegetables are tender.
  6. Stir in the fresh cilantro and lemon juice.
  7. Serve the lentil stew hot, garnished with additional cilantro if desired.
