Ingredients
  • 1 cup Red Lentils
  • 2 cup Spinach
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Carrot
  • 2 stalk Celery
  • 4 cup Vegetable Stock
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, minced garlic, carrot, and celery. Cook until vegetables are softened.
  3. Add cumin powder, turmeric powder, salt, and black pepper. Stir well.
  4. Add red lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add spinach and cook for an additional 5 minutes.
  6. Remove from heat and let the soup rest for 5 minutes.
  7. Stir in lemon juice.
  8. Serve hot and enjoy!
