Lentil Soup

Lentils are a great source of plant-based protein and are commonly used in vegetarian and vegan dishes.

Rinse the lentils under cold water.

In a large pot, heat olive oil over medium heat.

Add chopped onion, carrot, celery, and minced garlic. Sauté until vegetables are tender.

Add cumin, paprika, salt, and black pepper. Stir for 1 minute.

Add lentils, vegetable broth, and diced tomato. Bring to a boil.

Reduce heat and simmer for 25-30 minutes, until lentils are soft.

Remove from heat and let it rest for 5 minutes.

Stir in lemon juice and fresh parsley.
