  1. In a large bowl, mash the cooked lentils until they form a chunky paste.
  2. Finely chop the onion and garlic cloves.
  3. In a small bowl, mix the ground flaxseed with water and let it sit for 5 minutes to form a gel-like consistency.
  4. Add the chopped onion, garlic, breadcrumbs, flaxseed gel, paprika, cumin, salt, and black pepper to the mashed lentils. Mix well.
  5. Form the lentil mixture into patties and place them on a baking sheet lined with parchment paper.
  6. Preheat the oven to 375°F (190°C).
  7. In a large skillet, heat olive oil over medium heat. Cook the lentil patties for 3-4 minutes on each side until golden brown.
  8. Transfer the partially cooked lentil patties to the preheated oven and bake for 10-15 minutes until cooked through.
  9. Remove the lentil patties from the oven and let them rest for 5 minutes.
  10. Toast the burger buns.
  11. Assemble the lentil burgers by placing a lettuce leaf, a lentil patty, tomato slices, and red onion slices on each bun.
  12. Serve the lentil burgers with your favorite condiments and enjoy!
