  1. Rinse the lentils and set aside.
  2. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Sauté until onion is translucent.
  3. Add curry powder, turmeric powder, cumin powder, and coriander powder. Stir well.
  4. Add mixed vegetables and cook for 5 minutes.
  5. Add lentils, coconut milk, water, and salt. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender.
  6. Serve hot with rice or naan bread. Garnish with fresh cilantro and lime wedges.
