Ingredients
  • 1 cup Lentils
  • 1 can Tomatoes
  • 1 medium Onion
  • 1 medium Carrot
  • 1 stalk Celery
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the lentils and set aside.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
  3. Add cumin, paprika, salt, and black pepper. Stir well.
  4. Add lentils, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  5. Remove from heat and let it rest for 5 minutes.
  6. Serve hot, garnished with fresh parsley.
