Ingredients
  • 500 gram Asparagus
  • 2 teaspoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Fresh thyme
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Trim the woody ends of the asparagus and wash them.
  2. Bring a pot of salted water to a boil and blanch the asparagus for 2 minutes. Drain and transfer to a bowl of ice water to stop the cooking process.
  3. Heat olive oil in a pan over medium heat. Add the blanched asparagus and sauté for 3-4 minutes until tender.
  4. In a small bowl, whisk together lemon juice, thyme, salt, and black pepper.
  5. Pour the lemon-thyme mixture over the cooked asparagus and toss well to coat.
  6. Let the asparagus rest for 5 minutes before serving.
  7. Serve the lemony fresh asparagus with thyme as a side dish or as a part of a salad or pasta dish.
