Ingredients
  • 500 gram Asparagus
  • 4 cup Vegetable broth
  • 2 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 1 small Onion
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the asparagus and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  4. Stir in the lemon juice, salt, and black pepper.
  5. Serve hot, garnished with fresh parsley.
