Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil.

Add the rinsed quinoa to the boiling broth and reduce the heat to low.

Cover the saucepan and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.

In a small bowl, whisk together the lemon juice, olive oil, minced garlic, chopped parsley, chopped mint, salt, and black pepper.

Once the quinoa is cooked, remove it from the heat and let it rest for 5 minutes.

Fluff the quinoa with a fork and then pour the lemon herb dressing over it.

Mix well to combine all the flavors.
