Ingredients
  • 500 gram Carrots
  • 2 cup Rice
  • 1 piece Onion
  • 2 clove Garlic
  • 1 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Parsley
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.
  3. Add the cumin, coriander, salt, and black pepper to the onion mixture, and cook for another minute.
  4. Add the rice and vegetable broth to the saucepan, and bring to a boil. Reduce the heat to low, cover, and simmer for 10 minutes.
  5. Meanwhile, peel and slice the carrots into thin rounds.
  6. In a baking dish, layer half of the cooked rice, followed by a layer of sliced carrots. Repeat with another layer of rice and carrots.
  7. Cover the baking dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the carrots are tender.
  9. Garnish with chopped parsley before serving.
