  1. Rinse the quinoa thoroughly.
  2. In a saucepan, bring 2 cups of water to a boil and add the rinsed quinoa. Reduce heat, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed.
  3. In a separate pan, heat olive oil over medium heat. Add diced red onion, red bell pepper, and corn. Cook for 5 minutes until vegetables are tender.
  4. Add black beans, cumin, salt, and pepper to the pan with the vegetables. Stir well and cook for another 5 minutes.
  5. In a large bowl, combine the cooked quinoa and the vegetable mixture. Squeeze lime juice over the mixture and toss to combine.
  6. Garnish with chopped cilantro and serve warm.
