Kitchen Sink Soup
Kitchen Sink Soup got its name because it’s a soup that can be made with any leftover vegetables you have in your kitchen, hence the idea of throwing everything but the kitchen sink into the pot!

Heat olive oil in a large pot over medium heat.

Add the onion, garlic, carrots, and celery. Sauté for 5 minutes until vegetables are slightly softened.

Add the potatoes, zucchini, diced tomatoes, vegetable broth, mixed beans, corn, peas, dried herbs, salt, and black pepper.

Bring the soup to a boil, then reduce heat and simmer for 20 minutes until the vegetables are tender.

Stir in fresh parsley.
