  1. Rinse the black-eyed peas under cold water and soak them overnight.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion, carrot, celery, and minced garlic. Cook until vegetables are tender.
  3. Drain and rinse the soaked black-eyed peas and add them to the pot. Stir in vegetable broth, diced tomato, bay leaf, thyme, smoked paprika, salt, and black pepper.
  4. Bring the soup to a boil, then reduce heat to low and simmer for 45 minutes or until the black-eyed peas are tender.
  5. Remove the bay leaf and discard. Use an immersion blender to partially blend the soup, leaving some texture.
  6. Stir in fresh parsley and lemon juice. Let the soup rest for 10 minutes before serving.
  7. Serve hot and enjoy!
