Prepare all the ingredients by washing and cutting them into thin strips.

Fill a large bowl with warm water.

Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.

Place the softened rice paper wrapper on a clean surface.

Layer lettuce leaves, carrots, cucumber, bell peppers, avocado, mint leaves, and cilantro leaves on the lower third of the rice paper wrapper.

Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to form a roll.

Repeat steps 3-6 with the remaining rice paper wrappers and filling ingredients.

In a small bowl, mix together peanut butter, soy sauce, and lime juice to make the dipping sauce.

Serve the salad rolls with the dipping sauce on the side.
