Peel and cut sweet potatoes into cubes.

Heat oil in a pan and add chopped onion, ginger, garlic, and green chili. Saute until onions turn translucent.

Add chopped tomatoes and cook until they turn soft.

Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well.

Add sweet potato cubes and salt. Mix well to coat the masala.

Cover and cook for about 15-20 minutes until sweet potatoes are cooked through.

Sprinkle garam masala and garnish with fresh coriander leaves.
