Ingredients
  • 200 gram Kale
  • 150 gram Cherry tomatoes
  • 100 gram Cucumber
  • 50 gram Red onion
  • 100 gram Avocado
  • 2 teaspoon Lemon juice
  • 2 teaspoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Wash and dry the kale leaves. Remove the tough stems and chop the leaves into bite-sized pieces.
  2. Slice the cherry tomatoes in half.
  3. Peel and dice the cucumber.
  4. Finely chop the red onion.
  5. Cut the avocado in half, remove the pit, and dice the flesh.
  6. In a large mixing bowl, combine the kale, cherry tomatoes, cucumber, red onion, and avocado.
  7. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  8. Pour the dressing over the salad and toss to coat evenly.
  9. Let the salad rest for 10 minutes to allow the flavors to meld.
