  2. Add sliced onion and red bell pepper to the skillet. Cook for 3-4 minutes until they start to soften.
  3. Drain and rinse chickpeas, then add them to the skillet along with the kale. Stir-fry for 5-6 minutes until the kale is wilted.
  4. Season with soy sauce, salt, and black pepper. Cook for another 2 minutes.
  5. Remove from heat and drizzle with lemon juice.
  6. Let the stir-fry rest for 5 minutes before serving.
