Rinse the quinoa thoroughly and cook it according to package instructions.

In a blender, combine cooked quinoa, almond milk, flaxseed meal, maple syrup, vanilla extract, cinnamon powder, baking powder, and salt. Blend until smooth.

Heat a non-stick pan over medium heat and add coconut oil.

Pour 1/4 cup of the batter onto the pan and spread it into a round shape.

Cook for 2-3 minutes on each side until golden brown.

Repeat with the remaining batter.
