  1. Cook the sweet potato glass noodles according to the package instructions. Drain and rinse with cold water. Set aside.
  2. Blanch the spinach in boiling water for 1 minute. Drain and rinse with cold water. Squeeze out excess water and cut into bite-sized pieces.
  3. Julienne the carrots, bell peppers, and onion.
  4. Heat vegetable oil in a large pan or wok over medium heat. Add garlic and stir-fry until fragrant.
  5. Add the carrots, bell peppers, and onion to the pan. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
  6. Add the cooked glass noodles and spinach to the pan. Stir in soy sauce, sugar, salt, and sesame oil. Mix well until everything is evenly coated.
  7. Cook for an additional 2-3 minutes, stirring constantly.
  8. Remove from heat and let it rest for 10 minutes.
  9. Garnish with sesame seeds and chopped green onions before serving.
