  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 4 clove Garlic cloves
  • 1 can Canned Tomatoes
  • 4 cup Vegetable Broth
  • 2 leaf Bay Leaves
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 can Canned Beans (e.g., Cannellini)
  • 1 cup Short Pasta (e.g., Ditalini)
  • 2 cup Fresh Spinach
Instructions
  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrot, celery, and garlic to the pot. Saute until vegetables are softened, about 5 minutes.
  3. Stir in canned tomatoes, vegetable broth, bay leaves, dried basil, dried oregano, salt, and black pepper.
  4. Bring the soup to a boil, then reduce heat to low and let it simmer for 20 minutes.
  5. Add canned beans and short pasta to the pot. Cook until pasta is al dente, about 10 minutes.
  6. Stir in fresh spinach and cook until wilted, about 2 minutes.
  7. Remove the pot from heat and let the soup rest for 10 minutes.
  8. Serve hot and enjoy!
