  3. Add the ground cumin, ground coriander, and salt. Stir for a minute.
  4. Add the mung beans and water to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Add the rice and continue simmering for another 15 minutes or until the rice and beans are cooked and tender.
  6. Remove from heat and let it rest for 10 minutes.
  7. Stir in lemon juice and fresh parsley.
  8. Serve hot and enjoy!
