  1. Preheat the grill. Slice the eggplant into 1/2-inch thick rounds. Brush both sides with olive oil and sprinkle with salt.
  2. Grill the eggplant rounds for 3-4 minutes per side, until they are tender and have grill marks. Remove from grill and let cool.
  3. In a medium saucepan, bring water to a boil. Add the red lentils and cook for 10-12 minutes, until they are tender. Drain and set aside.
  4. In a large bowl, combine the cooked lentils, grilled eggplant, diced mango, diced red onion, chopped cilantro, lemon juice, olive oil, ground cumin, ground coriander, turmeric powder, salt, and black pepper. Mix well.
  5. Let the salad rest for 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
