Peel and slice the carrots.

Heat olive oil in a pan and add minced garlic and ginger. Stir-fry for a minute.

Add the sliced carrots to the pan and stir-fry for 5-7 minutes until they are slightly tender.

In a small bowl, mix soy sauce and honey. Pour the mixture over the carrots and stir-fry for another 2 minutes.

Sprinkle sesame seeds and chopped green onions on top.

Remove from heat and let it rest for 5 minutes before serving.
