  6. Shape the mixture into patties and refrigerate for 15 minutes.
  7. Heat olive oil in a skillet and cook the patties for about 3-4 minutes per side, until golden brown.
  8. Toast the hamburger buns and assemble the veggie burgers with lettuce, tomato, red onion, avocado, and mayonnaise.
