Preheat the oven to 425°F (220°C).

Peel and chop the carrots, potatoes, sweet potatoes, and red onions into bite-sized pieces.

In a large bowl, combine the chopped vegetables, honey, olive oil, fresh rosemary, salt, and black pepper. Toss until the vegetables are evenly coated.

Spread the vegetables out in a single layer on a baking sheet.

Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and golden brown, stirring once halfway through.
