Preheat the oven to 325°F (160°C).

In a large bowl, mix the rolled oats, almonds, walnuts, pumpkin seeds, sunflower seeds, and coconut flakes.

In a small saucepan, heat the maple syrup, coconut oil, vanilla extract, and cinnamon over low heat until combined.

Pour the syrup mixture over the dry ingredients and stir until well coated.

Spread the mixture evenly on a baking sheet lined with parchment paper.
