Rinse the lentils and set aside.

In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Cook until vegetables are tender.

Add lentils, vegetable broth, tomatoes, bay leaves, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are cooked.

Remove bay leaves and serve hot. Garnish with fresh parsley.
