Preheat the oven to 350°F (175°C).

In a large bowl, combine the rolled oats, whole wheat flour, baking powder, cinnamon, and salt.

In a separate bowl, mix the mashed banana, maple syrup, applesauce, and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until well combined.

Fold in the raisins and chopped nuts (if using).

Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.

Flatten each cookie slightly with the back of a spoon.

Bake for 12 minutes or until golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
