  1. In a food processor, blend almonds until finely chopped. Add shredded coconut, maple syrup, coconut oil, vanilla extract, and sea salt. Pulse until well combined.
  2. Shape the mixture into small rectangular bars and place them on a baking sheet lined with parchment paper.
  3. Place the bars in the refrigerator for about an hour to firm up.
  4. In the meantime, melt the dark chocolate in a heatproof bowl over a pot of simmering water.
  5. Remove the bars from the refrigerator and dip each one into the melted chocolate, making sure to coat all sides.
  6. Return the coated bars to the baking sheet and refrigerate for another 10 minutes to allow the chocolate to set.
  7. Once the chocolate has hardened, the almond joys are ready to be enjoyed!
