Ingredients
  • 2 cup Chickpeas
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Tomatoes
  • 1 medium Carrot
  • 2 stalk Celery
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh parsley
Instructions
  1. Soak the chickpeas overnight in water.
  2. Drain and rinse the chickpeas.
  3. In a large pot, heat olive oil over medium heat.
  4. Add the onion and garlic, and cook until softened.
  5. Add the tomatoes, carrot, celery, cumin, paprika, cayenne pepper, salt, and black pepper. Cook for 5 minutes.
  6. Add the chickpeas and enough water to cover them. Bring to a boil.
  7. Reduce heat to low, cover, and simmer for 30 minutes.
  8. Remove from heat and let it rest for 5 minutes.
  9. Blend the soup until smooth using an immersion blender or a regular blender.
  10. Stir in lemon juice.
  11. Serve hot, garnished with fresh parsley.
