Harira soup is a traditional Moroccan soup often served during Ramadan to break the fast.

In a large pot, heat olive oil over medium heat.

Add chopped onion, celery, carrots, and bell pepper. Cook until vegetables are tender.

Add minced garlic, ground cumin, ground ginger, ground turmeric, ground cinnamon, salt, and black pepper. Stir well.

Add chopped tomatoes, chickpeas, lentils, and water. Bring to a boil.

Reduce heat, cover, and simmer for 45 minutes to 1 hour, or until the lentils are tender.

Stir in chopped cilantro and parsley. Cook for an additional 5 minutes.

Remove from heat and let it rest for 10 minutes.
