Ingredients
  • 2 cup Rice
  • 1 cup Red Kidney Beans
  • 1 cup Coconut Milk
  • 2 cup Water
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 1 teaspoon Thyme
  • 1 whole Scotch Bonnet Pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 stalk Green Onion
  • 1 tablespoon Parsley
  • 1 tablespoon Olive Oil
Instructions
  1. Rinse the rice and beans separately.
  2. In a large pot, combine the rice, beans, coconut milk, water, onion, garlic, thyme, scotch bonnet pepper, salt, and black pepper.
  3. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  4. Simmer for about 25-30 minutes, or until the rice and beans are tender and cooked through.
  5. Remove the scotch bonnet pepper before serving.
  6. Garnish with chopped green onions and parsley.
  7. Drizzle with olive oil.
  8. Serve hot and enjoy!
