Ingredients
  • 2 medium-sized Onions
  • 1 cup Whole wheat breadcrumbs
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 large Egg
  • 1/4 cup Non-fat Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Slice the onions into rings and set aside.
  3. In a shallow bowl, mix the breadcrumbs, paprika, garlic powder, salt, and black pepper.
  4. In another bowl, whisk the egg, Greek yogurt, and lemon juice together.
  5. Dip each onion ring into the egg mixture, then coat it with the breadcrumb mixture.
  6. Place the coated onion rings on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes, or until golden brown and crispy.
  8. Remove from the oven and let them rest for 5 minutes.
  9. Garnish with fresh parsley and serve hot.
