Rinse the lentils and drain.

In a large saucepan, bring water to a boil and add the lentils. Cook for 15-20 minutes or until tender. Drain and set aside.

In a separate pan, heat the vegetable oil over medium heat. Add the onion and garlic and sauté until golden brown.

Add the ground cumin, ground coriander, turmeric, cayenne pepper, and salt to the pan. Stir well.

Add the cooked lentils to the pan and mix well. Cook for another 5 minutes.

Garnish with fresh cilantro before serving.
