  1. Wash and trim the green beans.
  2. Peel and dice the potatoes.
  3. Finely chop the onion and garlic cloves.
  4. In a large pot, heat the olive oil over medium heat.
  5. Add the onion and garlic and sauté until translucent.
  6. Add the green beans, potatoes, vegetable broth, salt, and black pepper.
  7. Bring to a boil and then reduce the heat to a simmer.
  8. Cover the pot and let it cook for 20-25 minutes until the green beans and potatoes are tender.
  9. Remove from heat and let the soup rest for 5 minutes.
  10. Stir in fresh parsley, lemon juice, and cumin powder.
  11. Use an immersion blender or transfer to a blender to puree the soup until smooth.
  12. Adjust seasoning if needed.
  13. Serve hot with a sprinkle of fresh parsley on top.
