Preheat the oven to 400°F (200°C).

Press the tofu to remove excess water, then cut it into cubes.

In a bowl, combine the maple syrup, barbecue sauce, soy sauce, garlic powder, ground black pepper, and olive oil.

Add the tofu cubes to the bowl and toss to coat them with the marinade.

Let the tofu marinate for 10 minutes.

Meanwhile, chop the bell peppers, zucchini, and red onion into bite-sized pieces.

Place the marinated tofu and chopped vegetables on a baking sheet.

Sprinkle with salt and bake for 20 minutes, or until the tofu is golden and the vegetables are tender.

Remove from the oven and let it rest for 5 minutes before serving.
