  • 0.5 cup Almond flour
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.33 cup Coconut oil
  • 0.33 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 cup Jam or fruit preserves
  • to taste Optional toppings (e.g. chopped nuts or coconut flakes)
Instructions
  1. Preheat the oven to 350°F (175°C)
  2. In a large bowl, whisk together the gluten-free flour, almond flour, baking powder, and salt
  3. In a separate bowl, mix together the coconut oil, maple syrup, and vanilla extract
  4. Pour the wet mixture into the dry mixture and stir until well combined
  5. Roll the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper
  6. Use your thumb or the back of a spoon to create an indentation in the center of each cookie
  7. Fill each indentation with a small spoonful of jam or fruit preserves
  8. Optional: sprinkle the cookies with chopped nuts or coconut flakes
  9. Bake for 10-12 minutes, until the edges are lightly golden
  10. Remove from the oven and let cool for 5 minutes on the baking sheet
