Ingredients
  • 1 cup Quinoa
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 medium Celery stalks
  • 2 clove Garlic cloves
  • 1 cup Mushrooms
  • 1/2 cup Dried cranberries
  • 1/2 cup Pecans
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Fresh thyme leaves
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Rinse the quinoa under cold water.
  3. In a saucepan, bring the vegetable broth to a boil and add the quinoa. Cook according to package instructions.
  4. In a large skillet, heat the olive oil over medium heat. Add the onion, celery, and garlic. Sauté until the vegetables are tender.
  5. Add the mushrooms and cook until they release their moisture.
  6. In a large bowl, combine the cooked quinoa, sautéed vegetables, dried cranberries, pecans, parsley, thyme, salt, and black pepper. Mix well.
  7. Transfer the mixture to a baking dish and cover with foil.
  8. Bake for 20 minutes, then remove the foil and bake for an additional 10 minutes.
  9. Let the stuffing rest for 5 minutes before serving.
