Gluten Free Monster Cookies
Monster cookies are called so because they are usually loaded with various mix-ins like chocolate chips, nuts, and dried fruits, making them ‘monstrously’ delicious!
This is vegan and gluten free recipe. Dish can be prepared in 27 minutes. Even a beginner can handle preparing this dish. Number of ingredients: 11.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, combine the gluten-free oats, almond flour, baking soda, and salt.

In a separate microwave-safe bowl, melt the coconut oil. Add the maple syrup, peanut butter, and vanilla extract to the melted coconut oil and stir until well combined.

Pour the wet ingredients into the dry ingredients and mix until fully combined. Fold in the dark chocolate chips, dried cranberries, and chopped walnuts.

Scoop about 2 tablespoons of dough and roll it into a ball. Place the dough balls onto the prepared baking sheet, leaving some space between each cookie.

Flatten each dough ball slightly with the back of a spoon.

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
