In a large mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, and salt.

Add the coconut oil to the dry mixture and use a pastry cutter or your fingers to cut it into the flour until the mixture resembles coarse crumbs.

In a separate bowl, combine the almond milk and apple cider vinegar. Let it sit for a few minutes until it curdles slightly.

Pour the almond milk mixture into the dry ingredients and stir until just combined.
