Rinse quinoa under cold water.

In a saucepan, bring water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes.

Remove from heat and let it rest for 10 minutes. Fluff with a fork.

In a large bowl, combine cooked quinoa, dried cranberries, sliced almonds, fresh parsley, lemon juice, olive oil, salt, and black pepper.

Toss well to combine all the ingredients.
